This recipe started with one goal:
How many vegetables can I sneak into a spaghetti sauce… without anyone noticing?
And somehow, this turned into one of the best spaghetti sauces I’ve ever made.
We’re blending bell peppers, broccoli, kale, onion, and garlic into a smooth base, then cooking it down with seasoned ground beef and marinara. The result? A rich, hearty, classic-tasting meat sauce that just happens to be loaded with vegetables.

Ingredients
Vegetables (the hidden base):
- 1 red bell pepper
- 1 yellow bell pepper
- 1 orange bell pepper
- 1 cup broccoli florets
- 1 cup kale (stems removed)
- 1 yellow onion
- 1–2 tablespoons minced garlic
Seasonings:
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 tablespoon Italian seasoning
- 1 teaspoon dried sage
- 1 teaspoon salt (plus more to taste)
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
Protein + Sauce:
- 1 lb ground beef
- 2 jars marinara sauce
- 1 tablespoon extra virgin olive oil
Instructions
1. Blend the vegetables
Add the bell peppers, broccoli, kale, onion, and garlic to a food processor.
Blend until you get a finely chopped or almost puréed mixture.
(This is how we “hide” the vegetables in the sauce)

2. Sauté the veggie base
Heat olive oil in a large pot over medium heat.
Add the blended vegetable mixture and cook for 5–7 minutes, stirring occasionally, until softened and slightly reduced.
3. Add seasoning
Stir in:
- onion powder
- garlic powder
- Italian seasoning
- sage
- salt
- pepper
- smoked paprika
- oregano
- basil
Cook for another 1–2 minutes to wake up the spices.

4. Brown the beef
Push the vegetable mixture to the sides of the pot.
Add the ground beef to the center and cook until browned, breaking it apart as it cooks.
Once fully cooked, mix everything together.

5. Add marinara and simmer
Pour in both jars of marinara sauce and stir to combine.
Reduce heat to low and let the sauce simmer for 30 minutes, stirring occasionally.

6. Taste and adjust
Taste the sauce and adjust seasoning as needed (salt, pepper, or herbs).
Tips for the Best Sauce
- Blend the veggies well so they fully melt into the sauce
- Let it simmer — this is where the flavor really develops
- Use a good quality marinara for the best base flavor
- Add a splash of pasta water if you want a thinner sauce
