Veggie-Packed Spaghetti Sauce
If you’ve ever tried to get more vegetables into your meals (or into your kids’ meals), this veggie-packed spaghetti sauce is about to become your go-to.

- 3 bell peppers red, yellow, orange
- 1 cup broccoli
- 1 cup kale
- 1 yellow onion
- 2 tbsp minced garlic
- 1 tbsp olive oil
- 1 lb ground beef
- 2 jars marinara sauce 24 ounce jars
Seasonings:
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp Italian seasoning
- 1 tsp sage
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp oregano
- 1 tsp basil
Blend all vegetables in a food processor until finely chopped.
Heat olive oil in a large pot and sauté vegetables for 5–7 minutes.
Add all seasonings and cook for 1–2 minutes.
Push veggies aside and brown ground beef in the center.
Mix together and add marinara sauce.
Simmer on low for 30 minutes.
Taste and adjust seasoning before serving.
Tips for the Best Sauce
- Blend the veggies well so they fully melt into the sauce
- Let it simmer — this is where the flavor really develops
- Use a good quality marinara for the best base flavor
- Add a splash of pasta water if you want a thinner sauce
