For the Apricot Glaze:

  • Apricot jam (I used a small jar—about ¾ cup) This is the exact brand I used
  • Yellow mustard
  • Hot sauce (choose your favorite level of heat)
  • Ginger paste This is a brand I have used before
  • Butter

This glaze is cooked quickly on the stovetop while the chicken bakes, then brushed generously over the crispy meat to finish.


How to Make Apricot Sweet & Spicy Chicken

Step 1: Preheat and Prep

Set your oven to 400°F. Line a baking sheet with foil or parchment paper for easy cleanup. Use a wire rack to make the chicken crispy all around.

Step 2: Season the Chicken

Mix all your dry seasonings together in a large bowl. Pat the chicken dry (this helps the skin crisp up), then toss it with the seasoning blend to coat thoroughly.

Step 3: Bake

Arrange the chicken on your prepared baking sheet on top of the rack. Bake for 45 minutes – 1 hour, or until the internal temp hits 165°F and the skin is golden and crispy. If you don’t have a rack, flip the chicken half way through.

Apricot Sweet & Spicy Chicken

Ingredients
  

Chicken

  • 8-10 Pieces bone in chicken thighs and/or drumsticks
  • 2 tsp baking powder
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp smoked paprika
  • 1 tbsp ground mustard
  • 1 tbsp black pepper
  • 1 tbsp ginger paste
  • 1 tsp crushed red pepper more or less depending on heat preference
  • salt to taste I use about 1 tbsp

Apricot Glaze

  • 2 tbsp butter
  • 10 oz apricot jam small jar, 10 OZ
  • 1 tbsp yellow mustard
  • 1 tbsp hot sauce use your favorite
  • 1 tbsp ginger paste

Instructions
 

Preheat & Season

  • Preheat your oven to 400°F. In a large bowl, combine all the dry seasonings and toss the chicken in the seasoning. Add the ginger paste and toss the chicken pieces until every piece is coated evenly.

Bake the Chicken

  • line a baking sheet with foil then cover with a wire rack. Place the seasoned chicken on a baking sheet. Bake for about 45 minutes- 1 hour, or until the internal temperature reaches 165°F. Time may vary slightly depending on the size of your pieces.

Make the Apricot Glaze

  • While the chicken is baking, prepare the glaze. In a saucepan over low heat, melt the butter. Add in the apricot jam, mustard, hot sauce, and ginger paste. Stir until everything is melted together and slightly thickened, about 5–7 minutes.

Glaze and Serve

  • Once the chicken is fully cooked, remove it from the oven and brush (or pour) the apricot glaze all over each piece. Serve immediately with your favorite sides: rice, roasted veggies, or a crisp salad all pair beautifully.

Pro Tips:
  • Don’t skip the baking powder—it helps create crispy skin in the oven.
  • Want extra heat? Add more crushed red pepper or a spicier hot sauce.
  • This glaze works great on salmon or tofu too!

I used thighs and drumsticks, seasoned them generously, and roasted them until golden and crispy. But the real magic? That apricot glaze.

It’s buttery, bold, and made with jam, mustard, hot sauce, and ginger paste. I poured it right over the crispy chicken and let it soak in. SO good.

This one’s going on repeat.

Full recipe:
Seasoning Mix:
– 2 tsp baking powder
– 1 tbsp garlic powder
– 1 tbsp onion powder
– 1 tbsp smoked paprika
– 1 tbsp ground mustard
– 1 tbsp black pepper
– 1 tbsp ginger paste
– 1 tsp crushed red pepper
– Salt to taste

Bake: Chicken thighs + drumsticks at 400°F until internal temp reaches 165°F.

Apricot Glaze:
– 2 tbsp butter
– 1 small jar apricot jam
– 1 tbsp yellow mustard
– 1 tbsp hot sauce
– 1 tbsp ginger paste

Melt butter, mix in sauce ingredients, simmer, then pour over the cooked chicken. That’s it!
