Apricot Sweet & Spicy Chicken

Chicken
- 8-10 Pieces bone in chicken thighs and/or drumsticks
- 2 tsp baking powder
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp smoked paprika
- 1 tbsp ground mustard
- 1 tbsp black pepper
- 1 tbsp ginger paste
- 1 tsp crushed red pepper more or less depending on heat preference
- salt to taste I use about 1 tbsp
Apricot Glaze
- 2 tbsp butter
- 10 oz apricot jam small jar, 10 OZ
- 1 tbsp yellow mustard
- 1 tbsp hot sauce use your favorite
- 1 tbsp ginger paste
Make the Apricot Glaze
While the chicken is baking, prepare the glaze. In a saucepan over low heat, melt the butter. Add in the apricot jam, mustard, hot sauce, and ginger paste. Stir until everything is melted together and slightly thickened, about 5–7 minutes.
Glaze and Serve
Once the chicken is fully cooked, remove it from the oven and brush (or pour) the apricot glaze all over each piece. Serve immediately with your favorite sides: rice, roasted veggies, or a crisp salad all pair beautifully.
