I have a rule in my house: Homemade is always better. That’s why this homemade spicy pork breakfast sausage is a winner for any household. An additional benefit of making sausage from scratch is the cost savings. I usually make a big batch in bulk and I can get 3 pounds of ground pork from Sam’s club for less than $10.00. At the time when I bought in January of 2023, 3 pounds of ground pork was only $8.65 at Sams club. That is such a great deal!!

This recipe is super simple, however the one unordinary kitchen tool that I use to make each patty the same size is a medium ice cream scoop. I have this set from Amazon and I use the middle size.
The great thing about the seasoning for this homemade spicy pork breakfast sausage is that it can be universally used on other types of meat, not just pork! Try it with ground chicken, turkey or even vegan meat alternatives.
How to store your Spicy Pork Breakfast sausage
You can form your patties and freeze them raw for up to 3-4 months or you can cook them and freeze the cooked patties for up to 2-3 months. Using a vacuum sealing technique will give you a longer storage period because fresh air is the nemesis of freezer storage success.
Breakfast Sandwiches
You can also put together a bunch of breakfast sausage sandwiches and store them in the freezer. This will save you a ton of time during the week when you need to just grab and go. When you know you are going to want one, put it in the fridge the night before to defrost or stick it in the oven to cook while you are getting dressed in the morning. You can wrap them in foil and store them in freezer safe ziplock bags.

Ingredients
- 1 lb Ground Pork
- 4 Cloves medium garlic cloves option to add more
- 2 tbsp Light brown sugar
- 1½ tbsp Sage
- 1½ tbsp thyme
- 1½ tbsp kosher salt
- 1 tsp black pepper
- ½ tsp crushed red pepper
- ½ tsp poultry seasoning
- ½ tsp smoked paprika
- ¼ tsp onion powder
Optional
- 1 tbsp Fennel seed
Instructions
- Mix all ingredients together and add to 1 pound of your meat of choice , I am using ground pork but you can also use turkey, chicken, or vegan meat options.
- Let meat marinate in fridge overnight or for at least 2 hours.
- Use a medium sized ice cream scooper to make even scoops of the meat.
- layer the balls on parchment paper and flatten with a spatula. cook on the stove until browned on both sided and cooked all the way through the middle
- You also have the option to freeze uncooked sausages in between two layers of parchment paper for later use. it is good up to 4 months in the freezer
