Teriyaki Chicken Rice Bowl

Ingredients
  

For the Chicken

  • 1 lb boneless skinless chicken thighs or breasts, cubed
  • 1 tsp white pepper
  • 1 tsp ginger fresh or powder
  • 1 tsp garlic powder
  • 2 cups cooked rice
  • 1 tbsp sesame oil
  • 1 cup broccoli florets
  • 1 carrot sliced
  • 1 bell pepper sliced
  • Sesame seeds and green onions for garnish

For the Teriyaki Sauce

  • 1/2 cup soy sauce
  • 1/4 cup water
  • 1/4 cup brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions
 

  • Season chicken with pepper, ginger powder, garlic powder
  • Simmer sauce ingredients and thicken with cornstarch.
  • Cook chicken in a skillet until browned.
  • Add vegetables and cook until tender-crisp.
  • Toss with teriyaki sauce and serve over rice.
  • Garnish with chopped green onions and sesame seeds.
