Place the mozzarella cheese and cream cheese in a microwave safe bowl. Microwave for 30 seconds at a time stirring in-between until melted.
Scrape the cheese into a food processor with the egg and process until smooth
Add the dry ingredients to the food processor until a sticky dough forms. It should be sticky. Pour the dough into a piece of cling film and put it in the freezer while the oven preheats.
Preheat the oven to 400℉ and line a baking sheet with parchment paper
When oven is ready, remove dough from freezer and divide dough into 6 separate pieces (4 pieces for larger bagels). Roll each portion and form into a ring.
Put pieces onto parchment paper ant add your prefered toppings.
Bake for 15 minutes or until the top is browned.
Let them cool before slicing. NOTE: The will lose a little bit of their air and flatten a little bit but they are still delicious!
Keep them in the fridge in an airtight container. They also freeze well.
