Creamy Spaghetti Squash with Salmon

This is one of those meals that feels fancy but is actually super simple—creamy spaghetti squash, flaky salmon, and a rich sauce that brings it all together.

Ingredients
  

Spaghetti Squash

  • 1 spaghetti squash
  • 1/2 tsp Onion powder
  • 1/2 tsp Garlic powder
  • 1/2 tsp Smoked paprika
  • 1/2 tsp Black pepper
  • Water or vegetable broth for baking

Salmon

  • 2 Salmon fillets
  • 1 tsp Old Bay
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil for searing
  • Use enough seasoning to coat the salmon — reserve the extra for the sauce.

Creamy Sauce

  • 1 tbsp olive oil
  • ½ cup onion red, white, or yellow, diced
  • 1 cup cherry tomatoes halved
  • 2 tbsp minced garlic
  • cup dry white wine or vegetable stock
  • cup heavy cream
  • ¼ cup grated parmesan cheese
  • Reserved seasoning from salmon
  • Salt to taste

Instructions
 

Roast the Spaghetti Squash

  • Preheat oven to 350°F.
  • Cut spaghetti squash in half lengthwise (carefully — it’s tough).
  • Scoop out seeds.
  • Season inside with onion powder, garlic powder, smoked paprika, and black pepper.
  • Place squash cut-side down in a baking dish with about ½ inch of water or broth.
  • Poke a few holes in the back of the shell to allow steam to escape.
  • Bake for 40–45 minutes, or until fork-tender.

Cook the Salmon

  • Season salmon with the spice mix.
  • Heat olive oil in a pan over medium-high heat.
  • Sear salmon for about 2 minutes per side (or until cooked to your liking).
  • Remove and set aside.

Make the Creamy Sauce

  • Heat olive oil in a pan over medium heat.
  • Add onions, tomatoes, and garlic.
  • Sauté for 2–3 minutes until onions are translucent and garlic is fragrant.
  • Deglaze with white wine (or broth).
  • Simmer for about 5 minutes, reducing liquid by half.
  • Stir in heavy cream.
  • Turn off heat and add parmesan cheese.
  • Season with remaining salmon seasoning and adjust salt to taste.

Prepare the Squash

  • Once cooked, use a fork to pull the spaghetti squash into strands.
  • Leave in the shell for serving or transfer to a bowl.

Assemble

  • You have two options:

Option 1: Mix squash with sauce and top with salmon
