Asian Turkey Meatball Rice Bowl

Ingredients
  

  • 1 pound ground turkey
  • 1/4 cup breadcrumbs
  • 1/4 cup green onions chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger minced
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked rice
  • 1 cup mixed vegetables e.g., bell peppers, broccoli, carrots
  • Soy sauce or teriyaki sauce for drizzling
  • Sesame seeds for garnish
  • Chopped cilantro for garnish optional

Instructions
 

  • Preheat Oven: Preheat your oven to 400°F (200°C).
  • Make Meatballs: In a bowl, combine ground turkey, breadcrumbs, green onions, soy sauce, sesame oil, ginger, garlic, salt, and pepper. Mix until well combined. Form into meatballs, about 1 inch in diameter.
  • Bake Meatballs: Place meatballs on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until cooked through and golden brown.
  • Prepare Rice: While meatballs are baking, cook rice according to package instructions.
  • Sauté Vegetables: In a skillet, sauté mixed vegetables over medium heat until tender, about 5-7 minutes.
  • Assemble Bowls: In serving bowls, layer cooked rice, sautéed vegetables, and turkey meatballs. Drizzle with soy sauce or teriyaki sauce.
  • Garnish: Sprinkle with sesame seeds and chopped cilantro, if desired. Serve warm.
