Universal Chicken Seasoning | The Only Blend You Need

If you’ve ever stood in front of your spice cabinet wondering what to put on chicken… this is it.

This Universal Chicken Seasoning is savory, herby, slightly smoky, and just a little spicy. It works on everything — grilled chicken, baked chicken, air fryer chicken, even roasted vegetables.

It’s one of those blends you make once and keep on hand all week.

Simple ingredients. Big flavor. Zero guesswork.


Why This Seasoning Works

This blend hits all the right notes:

  • Paprika for warmth and color
  • Garlic & onion powder for depth
  • Thyme, basil, oregano for classic herb flavor
  • Salt & pepper to balance
  • Cayenne for just a subtle kick

It’s bold without being overpowering, which is why it works across different cooking methods and cuisines.


Ingredients

  • 2 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp dried thyme
  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • 2 tsp salt
  • 1 tsp ground black pepper
  • ½ tsp cayenne pepper

This recipe takes just 5 minutes to mix and makes about 4 servings universal chicken seasoning


How to Make It

  1. Add all ingredients to a bowl or jar.
  2. Stir or shake until fully combined.
  3. Store in an airtight container.

How to Use Universal Chicken Seasoning

For Chicken Breasts or Thighs

  • Pat chicken dry.
  • Drizzle lightly with olive oil.
  • Use about 1 tablespoon seasoning per pound of chicken.
  • Cook using your preferred method.

Cooking Methods

Oven:
Bake at 400°F for 20–25 minutes (depending on thickness).

Air Fryer:
Cook at 375°F for 12–16 minutes.

Grill:
Medium-high heat, 5–7 minutes per side.

Stovetop:
Medium heat, 6–8 minutes per side.

Always cook chicken to an internal temperature of 165°F.


It’s Not Just for Chicken

Despite the name, this seasoning also works on:

  • Roasted potatoes
  • Shrimp
  • Salmon
  • Tofu
  • Grilled vegetables
  • Sheet pan dinners

It’s a true “grab-and-go” blend.


Storage Tips

  • Store in an airtight jar
  • Keep in a cool, dry pantry
  • Best used within 3–6 months

If the herbs lose their smell, it’s time to refresh it.

I had two boneless, skinless chicken breasts left from dinner earlier this week, and instead of forcing another meal out of them, I turned them into homemade deli meat for sandwiches all week.

I did a quick brine with salt, peppercorns, garlic, and bay leaf for a few hours, then kept the seasoning simple with garlic powder and onion powder—because sandwich meat doesn’t need anything fancy. After that, I sous vide it at 150°F for 3 hours, sliced it nice and thin, and now we’ve got easy lunches ready to go.

It stays good in the fridge for 3–5 days, saves money, and honestly tastes way better than store-bought sandwich meat.

This isn’t traditional pho or traditional bò kho — just my cozy, weeknight version inspired by both flavors. I combined a rich, beef stew with pho broth spices to create something super comforting, aromatic, and perfect for colder nights a broth that tastes like it simmered all day (but it didn’t).
