If you cook pork chops regularly, you need a go-to seasoning blend. This is mine.

This pork chop seasoning is savory, slightly warm, and perfectly balanced with herbs and spices that complement pork without overpowering it. It’s simple, pantry-friendly, and works with baked, grilled, air-fried, or pan-seared pork chops.

Make it once, keep it in a jar, and dinner gets easier every time.


Why This Seasoning Works

Pork pairs beautifully with herbs like sage and thyme. This blend builds on that classic flavor profile with:

  • Sage for earthy depth
  • Thyme for brightness
  • Garlic powder for richness
  • Paprika for warmth
  • Allspice for subtle complexity
  • Salt and pepper for balance

It enhances the natural flavor of pork without masking it.


How to Use It

  • Use about 1 tablespoon per pound of pork
  • Pat pork chops dry before seasoning
  • Drizzle lightly with olive oil before applying
  • Cook until internal temperature reaches 145°F

4 years ago I made up this random recipe for a por 4 years ago I made up this random recipe for a pork loin roast and it was a time that I wasn’t taking blogging that seriously so I never wrote down the recipe. I put a simple version of this in my cookbook but today I dug through 4 years of video to find the “test” recipe I did to make this. It was SOOOOOOO GOOD. Leftover chicken, but make it useful. I had two b Leftover chicken, but make it useful.

I had two boneless, skinless chicken breasts left from dinner earlier this week, and instead of forcing another meal out of them, I turned them into homemade deli meat for sandwiches all week.

I did a quick brine with salt, peppercorns, garlic, and bay leaf for a few hours, then kept the seasoning simple with garlic powder and onion powder—because sandwich meat doesn’t need anything fancy. After that, I sous vide it at 150°F for 3 hours, sliced it nice and thin, and now we’ve got easy lunches ready to go.

It stays good in the fridge for 3–5 days, saves money, and honestly tastes way better than store-bought sandwich meat.
