Homemade Cajun Seasoning Mix (Bold, Smoky, and Easy to Make)

If you cook with Cajun flavors even semi-regularly, having a homemade Cajun seasoning mix on hand is a game changer. This blend is bold, smoky, savory, and spicy — and it comes together in just a few minutes using pantry spices.

It’s the exact kind of seasoning that works on everything: chicken, shrimp, seafood boils, roasted veggies, potatoes, and even eggs. Once you make it yourself, you’ll never need a store-bought version again.

What Makes This Cajun Seasoning So Good

This blend is well-balanced — not just heat for the sake of heat.

  • Smoked paprika adds deep, smoky flavor
  • Garlic and onion powder bring savory backbone
  • Black and white pepper add layered heat
  • Cayenne brings classic Cajun spice
  • Herbs like oregano and thyme round everything out

It’s bold without being overpowering, which makes it incredibly versatile.

Ingredient Notes

  • Smoked paprika: The base of the blend and key to the smoky flavor
  • Kosher salt: Seasons evenly throughout
  • Garlic powder & onion powder: Essential savory components
  • Black pepper & white pepper: Give depth and heat in different ways
  • Dried oregano & thyme: Add classic Cajun herb flavor
  • Cayenne pepper: Controls the spice level — adjust to taste

This seasoning leans traditional, but you can easily tweak the heat if needed.

How to Use Cajun Seasoning

This mix works great for:

  • Cajun chicken or shrimp
  • Seafood boils
  • Roasted potatoes or vegetables
  • Pasta dishes
  • Rice and grain bowls

A good starting point is 1–2 teaspoons per pound of protein, then adjust from there.

Storage Tips

  • Store in an airtight container or spice jar
  • Keep in a cool, dry place
  • Best used within 6 months for peak flavor

Making bacon at home is a process — I won’t lie.
There’s curing, waiting, smoking (or oven-cooking)… all the things.

But once you make it once?
You’ll never look at store-bought bacon the same again.

It’s richer, fresher, and you actually know what went into it. And that first slice you cook yourself hits different.

If you’ve been curious about making bacon from scratch, this is your sign.

Okay listen… my friend Panna gave me this Cambodia Okay listen… my friend Panna gave me this Cambodian lemongrass chicken stir-fry recipe, but she handed it to me without measurements 😅 So I did what any home cook would do — I eyeballed it, tasted as I went, and hoped for the best.

Turns out… it was absolutely 🔥. I used about 1½ lbs of chicken, threw in some fresh garlic, fish sauce, lemongrass paste, bell peppers, onions, and served it over coconut rice (which I highly recommend by the way).

This might not be 100% traditional (because I probably messed something up) , but it was 100% delicious. Bookmark it, tweak it, make it yours

•	2ish lbs chicken breast, chopped
	•	3 tablespoons fish sauce
	•	1 tbsp sugar
	•	1 tbsp onion powder
	•	1 tbsp garlic powder
	•	2 chicken bouillon cube (or 2 tsp bouillon powder)
	•	about ½ cup lemongrass, minced very finely
	•	3 cloves garlic, minced
	•	½ onion, sliced
	•	1 bell pepper, sliced
	•	1 jalapeño, thinly sliced (I didn’t use this but it was in her recipe)
	•	Cooked white rice, for serving
