I’m about to make a big batch of breakfast sausage but before I post the recipe on how to make the breakfast sausage, I wanted to get you guys the recipe for a spicy breakfast sausage seasoning that you can save to make on your own. You can easily triple this recipe and keep the seasoning in your pantry so it is ready for the next batch you make!
What type of sausage can you make with this?
I traditionally use pork sausage with this breakfast sausage seasoning mix but it also works with turkey and chicken. One of the reason I use pork is because it is cost effective. I can buy it in bulk from Sam’s club for less than $10 for 3 pounds.
Fresh or dried herbs for your breakfast sausage seasoning??
If you can, use fresh sage and thyme in this recipe. It makes the sausage patties nice and bright and the flavor adds an additional punch. Don’t worry, If you only have the dried version it will still be delicious.
Now, I really like sage so I go heavy on the sage, you can do half the amount if it’s not your favorite. The first questions I always get when I post this recipe is WHERE’S THE FENNEL!?!? For me, I don’t love fennel so I leave it out, but if you are fennel person feel free to add either a tablespoon of ground or the seed version.
Try making a bulk batch
Try to triple this recipe and keep the seasoning in an airtight jar so you have it ready to use at any moment. You can also just make a big batch of the sausage and freeze it raw for up to 3 months. in addition, you can assemble breakfast sandwiches and freeze them for a grab and go experience!
Breakfast Sausage Seasoning
Ingredients
- 4 cloves medium garlic cloves
- 2 tbsp Light brown sugar Or brown sugar substitute
- 1½ tbsp sage
- 1½ tbsp thyme
- 1½ tbsp kosher salt
- 1 tsp black pepper
- ½ tsp crushed red pepper
- ½ tsp poultry seasoning
- ½ tsp smoked paprika
- ¼ tsp onion powder
Optional
- 1 tbsp fennel seed
Instructions
- Mix all ingredients together and add to 1 pound of your meat of choice
- Let meat marinate in fridge overnight or for at least 2 hours.
