A Little More About Me

Hi Friends! I’m Jennifer Abernathy AKA Jenniabs. I am a serial entrepreneur and I have always used cooking as my time to relax after a long crazy work day. It can be said that a good dish is any food that is made with love and passion and boy do I have a lot of both to give!

As mentioned in my short bio, I had the opportunity to travel the world during my days of being a professional volleyball player. Those years introduced me to the magic of the culinary world and I am still amazed at how food was able to unite so many strangers who didn’t even speak the same language.

I have done my best to combine what I learned from my travels with the foundational kitchen skills my mother taught me as a stay at home mom. On my blog you will see some classic recipes, but most of the time they will have some sort of California twist.

You know I had to try the viral version—and wow. It’s creamy, sliceable, and melts like a dream. I used silicone molds instead of a loaf pan, and it made perfect little cheese blocks!

📌 Save this one. Here’s the easy recipe:

Ingredients:
	•	1 lb sharp cheddar (hand-shredded)
	•	1 cup boiling water
	•	1/3 cup powdered milk
	•	2 ½ tsp beef gelatin (or 3 sheets silver grade gelatin, softened in cold water)

Instructions:
	1.	Line a loaf pan with plastic wrap or use a silicone molds instead.
	2.	In a blender, add boiling water, powdered milk, and softened gelatin. Blend until dissolved.
	3.	Add cheese a handful at a time while blending on high until totally smooth.
	4.	Pour into molds, cover, and refrigerate at least 3 hours or overnight.
	5.	Store in the fridge up to 5 days.

Tip: For smooth melting, thaw in the fridge if freezing!

This chicken is sticky, savory, and has the perfect balance of sweet heat.

I used thighs and drumsticks, seasoned them generously, and roasted them until golden and crispy. But the real magic? That apricot glaze.

It’s buttery, bold, and made with jam, mustard, hot sauce, and ginger paste. I poured it right over the crispy chicken and let it soak in. SO good.

This one’s going on repeat.

Full recipe:
Seasoning Mix:
– 2 tsp baking powder
– 1 tbsp garlic powder
– 1 tbsp onion powder
– 1 tbsp smoked paprika
– 1 tbsp ground mustard
– 1 tbsp black pepper
– 1 tbsp ginger paste
– 1 tsp crushed red pepper
– Salt to taste

Bake: Chicken thighs + drumsticks at 400°F until internal temp reaches 165°F.

Apricot Glaze:
– 2 tbsp butter
– 1 small jar apricot jam
– 1 tbsp yellow mustard
– 1 tbsp hot sauce
– 1 tbsp ginger paste

Melt butter, mix in sauce ingredients, simmer, then pour over the cooked chicken. That’s it!
