Cheesy Buffalo Chicken Dip

As I am writing this, we are 5 days away from the 22/23 Superbowl! Superbowl appetizers are a staple of the NFL championships. They usually consist of bite sized foods that are easy to grab and enjoy while watching the game.

Having some sort of chip and dip staple in your recipe book is a MUST when you need to feed many people at one time. That is why you will love this cheesy buffalo chicken dip recipe. It is so simple that you only need to shop for 7 things. (8 if you count the garlic powder but people usually have that in their pantry so I don’t count that on the shopping list).

A cheesy combo

I have traditionally used mozzarella and cheddar for this dish but I bet it would be delicious with any combo of your favorite cheeses. Feel free to experiment and let me know how it works out!

Most people pair this dish with tortilla chips but you can also set up a tray of your favorite vegetables to go along with the cheesy buffalo chicken dip. Almost anything that is dippable goes great with it… you can even just cut up pieces of bread!

The magic to the sauce

There are so many different types of buffalo sauce out there, I just so happen to use Franks buffalo wing sauce for this recipe because their flavors are always sharp. Use whatever buffalo sauce that you can get you hands on so keep an eye out for the weekly discounts and buy whatever is the best price.

To shred or not to shred

I like to boil my chicken breast and then shred it in the stand mixer with the flat beater attachment. But you can save yourself some time and just buy a whole rotisserie chicken that is already cooked and shred it.

Pro tip for parties

Make a big batch of the cheesy buffalo chicken dip but bake it is a few smaller serving bowls. Spread each bowl throughout the house so people can access it without missing important any part of the game.

Buffalo Chicken Dip

Equipment

  • Stand Mixer optional

Ingredients
  

  • 2 cups Shredded Chicken about 2 to 3 large chicken breast
  • 1 cup Cheddar Cheese
  • 1 cup Mozzarella Cheese
  • 2/3 cup Sour Cream
  • 8 oz Cream Cheese
  • 2/3 cup Buffalo Sauce
  • 1 Tbsp Garlic Powder
  • 2 Diced Green Onions

Instructions
 

  • Boil chicken breast until completely cooked through and shred it. You can shred with two forks, food processor or stand mixer with the flat beater attachment.
  • Mix cream cheese, sour cream, buffalo sauce and garlic powder together with a whisk. Mix until you have a creamy consistency with no lumps. *you can also do this in a mixer*
  • To the buffalo mixture, mix in 2 cups of shredded chicken, ½ cup mozzarella, ½ cup cheddar.
  • Fold in green onions saving just a little bit to sprinkle on the top for garnish.
  • Add mixture to a shallow dish. Spread the remaining cup of cheese evenly on top.
  • Bake at 350 for 20 minutes or until the top is bubbling and brown to your liking
  • Garnish with remaining green onions and serve with tortilla chips

Notes

Tip: The deeper the dish, the longer it will need to cook in the oven.

HOMEMADE PLAY-DOH RECIPE 
YOU’LL NEED:
	•	1.5 cup flour
	•	1/2 cup table salt
	•	2 tbsp cream of tartar
	•	1 tbsp oil
	•	1 cup boiling water
	•	Food coloring

INSTRUCTIONS:
1️⃣ In a bowl, combine flour, salt, and cream of tartar. Mix well.
2️⃣ Add the oil and mix again.
3️⃣ Add a few drops of food coloring to your boiling water and pour it into the dry mix.
4️⃣ Mix everything together and knead it with your hands once it cools slightly—add a little more flour if needed until the dough isn’t sticky.

🫙 Storage Tip: Let dough cool completely, wrap in plastic, and store in an airtight container at room temp. Lasts up to 6 months!

HOMEMADE VELVEETA STYLE CHEESE You know I had to HOMEMADE VELVEETA STYLE CHEESE 
You know I had to try the viral version—and wow. It’s creamy, sliceable, and melts like a dream. I used silicone molds instead of a loaf pan, and it made perfect little cheese blocks!

📌 Save this one. Here’s the easy recipe:

Ingredients:
	•	1 lb sharp cheddar (hand-shredded)
	•	1 cup boiling water
	•	1/3 cup powdered milk
	•	2 ½ tsp beef gelatin (or 3 sheets silver grade gelatin, softened in cold water)

Instructions:
	1.	Line a loaf pan with plastic wrap or use a silicone molds instead.
	2.	In a blender, add boiling water, powdered milk, and softened gelatin. Blend until dissolved.
	3.	Add cheese a handful at a time while blending on high until totally smooth.
	4.	Pour into molds, cover, and refrigerate at least 3 hours or overnight.
	5.	Store in the fridge up to 5 days.

Tip: For smooth melting, thaw in the fridge if freezing!

This chicken is sticky, savory, and has the perfect balance of sweet heat.

I used thighs and drumsticks, seasoned them generously, and roasted them until golden and crispy. But the real magic? That apricot glaze.

It’s buttery, bold, and made with jam, mustard, hot sauce, and ginger paste. I poured it right over the crispy chicken and let it soak in. SO good.

This one’s going on repeat.

Full recipe:
Seasoning Mix:
– 2 tsp baking powder
– 1 tbsp garlic powder
– 1 tbsp onion powder
– 1 tbsp smoked paprika
– 1 tbsp ground mustard
– 1 tbsp black pepper
– 1 tbsp ginger paste
– 1 tsp crushed red pepper
– Salt to taste

Bake: Chicken thighs + drumsticks at 400°F until internal temp reaches 165°F.

Apricot Glaze:
– 2 tbsp butter
– 1 small jar apricot jam
– 1 tbsp yellow mustard
– 1 tbsp hot sauce
– 1 tbsp ginger paste

Melt butter, mix in sauce ingredients, simmer, then pour over the cooked chicken. That’s it!
